2008 Yarra Valley Shiraz
Dixons Creek, Yarra Valley

Single vineyard wine from the Northern Yarra. Cane pruned 28 year old vines on yellow duplex soil with east west aspect.
8% whole bunches. Destem only. Cold soaked for 5 days. Wild ferment in open fermenters.
Hand plunged. Ferment to 33C. Pressed at dryness. 20% new Francois Frères Alliers French oak puncheon for 11 months.

Neither fined nor filtered.
